Is Too Much Juice Bad? – Dried meat is usually the biggest complaint with bad barbecue, but what about overly wet barbcue? It’s a fine balance between something that is moist, but not soggy. Has texture, but not too dry. I’m always trying to find the right balance between meat that’s juice, well seasoned, and has different textures for a more complex bite. It’s not always perfect, but I’m also always looking for certain cues to find consistency or inconsistencies in my cook. Looking at how much liquid is left in my wrap and the quality of a single bite can be one way of finding out the narrative of the cook.
