There's enough meat on that chicken for four meals first.

While it's a good use of the left over chicken, the herbs used in the western style chicken (rosemary, thyme, oregano) don't go well with the other spices in pho.
It tastes ok. My wife made it the other day just to try.

Instead of the spice bag, I've bought a roll of cheesecloth and cut pieces for different purposes. It will cost you far less and you can use it for so much.
