  1. NEVER ever slice jumbo scallops. Just use smaller ones. He cut the squid too small. Every seafood piece should be the size to accompany the fork of twirled pasta on it. Wine goes in earlier and reduces and THEN add seafood to cook more then add pasta before it is finished. The key (and difficult part) is to time everything so they cook to the right doneness when put all together in the end where generally pasta is 90% done, seafood is 50% done when added to the base sauce with aromatics and wine that has already reduced.

  2. Hi Jamie, today I made tagliatelle with seafood. look on YouTube how to do it. I liked your version but I had not all of these ingredients so I did it with a different twist.
    ……
    garlic and red pepper 🌶 chopped in the pan, salmon shrimps a few gambas mussles cockels squid, fritato and rose wine parsley salt and pepper and cooking cream drop the tagliatelle into it and it was delicious 😋 👌
