2 tablespoon butter
1 clove minced garlic
1 pound 80% lean ground beef
Salt and pepper, to taste
10 ounces sliced mushrooms
2 tablespoon water
1 ¼ cup sour cream
½ teaspoon paprika
1 tablespoon fresh lemon juice
1 tablespoon fresh chopped parsley

  1. I broke my 40 hour fast this afternoon with this meal! My daughter is gone on a camping trip so I took the opportunity to make something mushroom heavy as she can’t stand them. Absolutely delicious and very fast and easy. Instead of parsley I used cilantro. I also sliced up an avocado to go on top and scooped up each delicious bite with pork rinds. Those additions helped me get enough calories on OMAD. Happy to have leftovers all to myself!

  2. Instead of adding water to the mushrooms, put a tablespoon or two of butter in the pan and then sweat the mushrooms on a low heat. They'll release plenty of liquid themselves, and the sauce will add a flavorful richness to the dish.

  3. Nope nope nope! You lie! Stroganoff has noodles. That is not stroganoff! That is a bowl of creamed meat. You got my hopes up and dropped me like a sack of potatoes! And keto wont even let a person eat that. Sorry keto peeps in my feels. 😖
