HOW TO MAKE KETTLE FRIED CHICKEN

WHAT YOU WILL NEED:
– 3-5 Chicken Quarters cut into sections
– 2 cups Flour
– 3-4 tbs baking powder
– 2 tbs bbq rub (see recipe below)
– Cooking spray
– 1 cup Milk
– 1 tbs vinegar
– 2 eggs
BBQ Rub we used to season flour:
– 2 tbs Kosher salt
– 2 tbs coarse black pepper
– 1 tbs garlic powder
– 1/2 tbs paprika
– 1/2 tbs chili powder
– 1/2 tbs cayenne pepper
STEP #1
To prepare your kettle fried chicken start by mixing together in separate bowls, your wet ingredients and your dry ingredients. Once your station is ready, dip your chicken into the flour mixture, then into the egg/milk mixture and then back into the flour mixture.. Repeat this step until all your chicken is breaded.
SETP #2
With your Chicken breaded set up your grill for cooking indirect at around 400F. Once your grill is up to temperature, place the chicken onto the grill opposite the coals. Add in a couple small pieces of hardwood for a kiss of smoky flavour, and then close the lid and begin cooking – we will have a total cook time of around 45-50 minutes.
STEP #3
After 20 minutes of cooking open up the grill and spray the chicken with a light coat of cooking oil and then flip the chicken and do the same on the bottom side. Next, close the grill and continue cooking for an additional 15 minutes. After 15 minutes, open up the grill one last time and flip the chicken one last time and continue cooking for another 10-15 minutes. Once your chicken is golden, crispy and reading between 175-195 you can remove them from the grill and enjoy the feast.

Why not just use buttermilk?
G’day mate, do you reckon I’d get benefit from leaving the chicken in the fridge for a few hours after coating in flour mix/buttermilk?

First, this NOT a complaint in any way.
Next… I've done this 4 times now in my BGE, and no matter what I do, no matter how much I monitor for high enough heat, that first flip leaves wayyy too much of the awesome exterior on the grates.
I've sprayed with 500+ def cooking oil (both the grates and the food), you name it… it's truly perplexing!
My question, in a truly "indirect" cook, I feel like I could go full "no flip" until it's done (maybe spritzing with said cooking oil along the way if it looks too dry). Thoughts?
