A simple pork fry with rich earthy flavour of sesame seed paste reminding you of the endless drizzle days in Meghalaya.

INGREDIENTS
1. Pork – 500 grams
2. Sesame seeds – 50grams
3. Oil – 1 tbsps
4. Salt as per taste
5. Dry Red chilies – 8 to 10
6. Ginger-garlic paste – 2 tsp
7. Turmeric – 1/3 Tsp.
8. Onions – 1medium finely chopped

PREPARATION
1. Dry roast the sesame seeds for 2 -3 minutes to bring out its flavor and then pound it with some water until it turns into a smooth paste.
2. Now heat oil in a pan and add the onions, fry this until translucent.
3. Add the ginger-garlic paste, turmeric powder, salt and dried red chilies. Fry this for 2 to 3 minutes on a low flame.
4. Now add the pre-boiled Pork (4 whistles in a pressure cooker) and fry this for another 10minutes. Keep stirring to ensure that the meat does not get stuck at the bottom of your pan and evenly fried.
5. After 10 minutes, add the sesame paste. Mix it well and cover this for 4-5 minutes for all the flavours of the dish are locked together.
6. Add 1 cup of lukewarm water and cook it for 2 minutes.

Serve it with hot steamed rice and salads.
