That dough or masa isn’t the traditional way we use masa ,salt, baking powder and lard, broth from cooking meat and if more liquid needed water added (never have I seen anybody use butter or sugar unless making sweet tamale. Just curious why did you use those ingredients (for me not authentic or traditional way of making the dough

Lol the "green husks" are banana leaves, the dry husks are from corn
Instead of water, use chicken broth and bouillon instead of salt to make the masa. It really amps up the flavor.
Try pickling tomatillos along with peppers and stuff, delicious.

The green tamales on the package are banana leaves. In the Yucatan region of Mexico, and other Caribbean countries, tamales and tamale-like concepts (ie. Puerto Rican pastels) are made with banana leaves rather than corn husks.

Its totally unnecessary to pre-cook the diced potatoes for your chorizo con papas. I never do. The dice will cook up perfectly with the chorizo.
Try putting some of the sauce in the flour and hominy mix.
I have been watching ATK for 5+ yrs, but this chorizo and potatoe taco is just below ok. Even walmart brand chorizo is better than this. Please his measurements are way way off!! Sad ATK just sad!!!!
The taco recipe is one of those strange ATK routines but it works and tastes great! Just be sure you follow their proportions. Regarding the tamales, did she really say that banana leaf comes with an ear of corn inside?….bahahahaha….made my day.
Just the opposite. Both Anaheims and New Mexico chiles are the same chile the only difference is the differing climate in the two states which is what makes the diff in the heat produced–New Mexico are hotter . . . much hotter, some, in fact will set your head on fire. Anaheims are more like bell peppers or Cubanelles.

I make three varieties and use torn husk ties to differentiate the fillings. Cheese tamales get a double tie and look like little packages. I've found it keeps the cheese inside better to close off both ends.
I love America’s test kitchen. But I’m disappointed with the tamal/tamales recipe. It’s a Rachel Ray version of tamales 🤦🏻♀️
You add don’t add grits or frozen corn in the traditional recipes. Bingeing Babbish did a great job making tamales.
