It's been years since I've had kinilaw. You are right about any seafood can be Kinilawed (if that's a word). My first encounter of kinilaw was actually Kinilaw na Pating (Shark) when I was young. It was probably still one of the best kinilaw that I've had in my life.

I love sinigang na sugpo, kinunot na pating & i dont know if this belong to seafood ginatang suso. Tahong & alimango is good too.
I remember cooking Kinilaw na dilis for my dad as it's his favourite along with Pinakbet Ilocano. Definitely took the bones out of the dilis ( I was that OC haha) and used sukang Iloko with ginger, chili, calamansi, onions. Yum!
Kinilaw is my all time favorite.

Try putting ginger on kilawin. Add more flavor on the fish.
My tita won't like to eat kinilaw before because it's raw. But she didn't even taste it.When some chance go on probably she's so curious and we always wants kinilaw. And now it's her favourite. Hahah
