I was literally (trying to) making hash browns from scratch when this was posted. Wish you were 1/2 hour earlier. The flip was a disaster: the two-spatula technique looks worth a try. I used a cheese grater (and only two smaller potatoes) so my "strands" were much smaller. Is this an important distinction to the process? I'll reserve adding toppings for level 2. Just salt and pepper for now.
So much easier if you parboil the potatoes 😂
