Funny that I've been doing this in restaurants for years as it just intuitively was easier and faster. More space more coverage etc etc.
The half assed attempt at breading the first time reminded me of the guy who sold those wonder knives years ago. He would destroy a loaf of bread unnecessarily, just as this perspn made of mess of breading the first way, ehich is totally fine if done with a little finess.
