Growing up, my mom cooked nothing but chicken & turkey. Now, in my 40s, for health reasons alone, I know I need to go back to poultry but have such an aversion to it. Brings back some very bland memories! 😅 I need to feel inspired to cook & it takes a lil more when it comes to chicken. This dish is nice & healthy and looks flavorful. 😊
