Make crispy outside, melt-in-mouth Balushahi at home—perfect for Diwali, Holi & all festivals! This simple step-by-step recipe uses maida, ghee, and sugar. Ingredients:
• Maida – 2 cups
• Salt – a pinch
• Baking soda – ½ tbsp
• Ghee – ⅓ cup
• Water – ½ cup (as needed)

For Sugar Syrup:
• Sugar – 2 cups
• Water – 1 cup
• Cardamom powder – ½ tbsp
• Kesar strands – few
• Food colour – optional

Method:
1. In a bowl, add maida, salt, baking soda, and ghee. Mix with fingers until crumbly.
2. Gradually add water and gently collect the dough (don’t knead).
3. Cover and rest for 10 minutes.
4. Lightly flatten the dough, fold, and repeat this 3–4 times for layers.
5. Shape into small balls, press the center slightly like a doughnut.
6. Fry on low flame until golden and crisp.
7. Prepare sugar syrup by boiling sugar and water until slightly sticky. Add cardamom, kesar, and food colour.
8. Dip fried Balushahi in warm syrup for 5 minutes.
