I just made your silken tofu lemon pie. It was delicious! I would like to make this cake but in Europe we don't have pumpkin puree. Can I just roast a pumpkin, blend it and use that puree? Or will it be too watery? Maybe a butternut squash or a Hokkaido would be better?
