We grow san marzano tomatoes in our garden , but not quite as good as from italy because of the soil, just like russett potatoes from Idaho grown in lava soil , no state grows russetts like idaho or vidalia onions from southwest region of Georgia where they grow vidalia onions, it is the soil that gives them more flavor

  2. How does he manage to simmer this broth in the stainless steel stock pot without the sauce burning and sticking? When I tried to use my stainless steel stock pot, my sauce started burning immediately ☹️

When someone wants my sauce recipe I give them the outline because it's always the same amount of this tomato and that tomato and onion and garlic and that doesn't change but the rest does and don't forget the good olive oil but not the super good finishing olive oil! This is slow food at its best! My marinara sauce is a different beast altogether! 🙂

  5. Chef, you simply rock! My former Italian from the old country, would use veal and chicken to make her sauce. The colour was a beautiful bright orange, and the flavour was outstanding! Not many people know that they can add chicken to a sauce, so thanks for sharing. Oh and, Browning the meat in advance makes so much sense!

  7. Cheif John. I'm all Italian I serve my sauce with meat. I cook my onions in cooking oil then add my sausage ribs and beef chunks and let the red out then add tomato paste let that stick to the meat then add tomato sauce and a can of tomato chunks. Please know what you are saying before you mention Italians. Good day.

  8. Not to be a spoilsport, Chef John, but your tomatoes aren't actually San Marzano type. The maker has used that moniker loosely, as a brand name. Look for DOP certification on the can, next time.

  9. This recipe is so close to the recipe from an Italian grandma it’s amazing. The main difference in mine is I put in some lamb and I make my sauce with Contadina tomato paste and sauce. I’ll have to try the San Mariano tomatoes instead.
