Grilled chicken thighs Ingredients:
-8 chicken thighs
-1 cup plain Greek yogurt (full fat is preferred)
-2 tbsp olive oil
-3 cloves garlic, minced
-1 tbsp lemon juice
-1 tsp lemon zest
-1 tsp ground cumin
-1 tsp ground coriander
-1 tsp smoked paprika
-1 tsp dried oregano
-1 tsp ground turmeric
-1/2 tsp ground cinnamon
-1/2 tsp ground black pepper
-1/2 tsp salt

Method
1) In a bowl, combine the Greek yogurt, olive oil, minced garlic, lemon juice, and lemon zest. MIX. Add the cumin, coriander, smoked paprika, dried oregano, turmeric, cinnamon, black pepper, and salt. Mix well until all ingredients are evenly combined.
2) Add the chicken thighs to the bowl, ensuring each piece is thoroughly coated with the yogurt spice mixture. Cover and refrigerate for at least 30 mins
3) Grill, bake, or pan-fry the marinated chicken until fully cooked and golden brown
4) serve on golden rice, with cucumbers, tomato, sliced onion, roasted chickpeas, yogurt, hummus, dill, parsley

GOLDEN RICE
-1.5 cup basmati rice
-1 cinnamon stick
-2 bay leaves
-1 tsp turmeric
-2 tbsp olive oil

method:
1) wash rice, add oil, turmeric mix well
2) add water, then add cinnamon stick and bay leaf into water
3) cook rice. Remove bay leaf and cinnamon once cooked

PICKLED RED ONIONS
– 1 red onion (sliced)
– 1 cup water
– 1 cup distilled white vinegar
– 1 tsp salt
– 1 tsp maple syrup

Method:
1) Add brine ingredients to a pot and bring to a boil. Pour over stem-to-root sliced red onions
2) cover and cook. Wait at least 30 minutes.

ROASTED CHICKPEAS
– 1 can (15 oz) chickpeas, drained and rinsed
– 1-2 tablespoons olive oil
– 1 teaspoon paprika (you can adjust to taste)
– Salt to taste

Method:
– preheat oven to 400 degrees
– rinse and drain chickpeas. Add chickpeas to a mixing bowl with olive oil, paprika, salt, and pepper. Make sure they are evenly coated
– spread out evenly on to a baking tray and bake for 25-30 minutes until they golden and crispy
