Also, I have been experiencing dough issues living in a humid climate like Florida. I need to add like 50-60 or more grams of flour to get a perfect dough. I wish this knowledge was more widespread as I’d been going crazy thinking the recipe was wrong 😭 love your recipes John, and I will continue to make them in my home on a regular basis ❤️
