This One-Pot Pasta Has 15,000+ Reviews and a Five-Star Rating | Melissa Clark | NYT Cooking

Here’s the FREE recipe for Melissa’s One-Pan Orzo With Spinach and Feta:

Similar to spanakorizo, a Greek spinach and rice dish, this easy, meatless meal from Melissa Clark features orzo, spinach, peas and scallions. It’s deeply satisfying but still on the lighter side thanks to all those vegetables. A little feta gives it creaminess and tang, while some lemon zest brightens everything up. And, if you needed any more convincing, more than 15,000 subscribers gave it five stars, so you know it’s a keeper.

  1. I’m a, “…don’t like a cup of mint,” person but I think arugula would be excellent here. It’s a sounds like a great, quick and flavorful recipe but it’s really easy to overcook orzo. 15 minutes sounds link a VERY long cook time.

  2. Thank you Melissa for a healthy, thoughtful, interesting, and accessible recipe. Thank you for offering a free recipe. I have been wanting to subscribe, but after the fees and exchange rate it is not feasible. I do own and love your last cookbook though.

  3. Cooking for my kids! I'm making a batch of chicken Milanese for my son to have lunches during August break, that's his all time fave. But it's also popular with the grown-ups, lol, so the day I make that (Thursday), we will all have it for dinner. What to have as a side? THIS. My daughter is absolutely obsessed with orzo dishes. One meal that makes leftovers for BOTH of my kids? Yes, please, and thank you!

  4. This is an excellent recipe I have made many times, though not lightly roasting the orzo in butter is a missed opportunity imo. I put the orzo in first with the butter and stir until they're lightly golden brown, take them out on a platter and continue with the garlic following the same steps. Makes an immense difference!

  5. Definitely going to try this. Aside: Melissa, in the rare chance you read this — you have the means to have your glasses adjusted so they don't slide. You deserve to not be fussing with them constantly. It is very fixable no matter the shape of face, ears, nose. At worst, treat yourself to some silicone hooks that slide on the end of the arms.
