This Mexican Street Corn Chicken Salad is fresh, flavorful, and basically summer in a bowl! ☀️ Ready in minutes and seriously delicious! 😋
STREET CORN CHICKEN SALAD INGREDIENTS:
For the chicken salad:
► 1 1/2 lbs. chicken breast
► 1 1/2 tbsp olive oil
► 1/2 tsp salt
► 1/2 tsp cayenne pepper
► 1/2 tsp black pepper
► 3 minced garlic cloves
► Zest of 1 lime
► Small bunch of cilantro
► 1 tbsp Maggi Jugo
► 3 fresh corn
► 1 bell pepper
► 1 shallot
► 1 jalapeño
► 2 green onions
► 1 avocado
► Queso cotija
► Some cilantro
► Chili powder
For the dressing
► 1/4 cup mayonnaise
► 1/3 cup sour cream
► 1 tbsp chipotle peppers in adobo
► 1 tsp olive oil
► 2 grated garlic cloves
► 1 tbsp lime juice
► Salt to taste
