Recipe:
300g spaghetti
200g guanciale
4 medium egg yolks
50g Pecorino Romano cheese (to grate)
15g freshly ground pepper
Salt to taste
To add just before serving
Pecorino Romano cheese to taste

nothing against the bain marie but just add your egg/cheese mix off the heat, no scramble
