Moroccan-Spiced Pork Loin Roast – Food Wishes – Holiday Roast



This amazing Moroccan-spiced pork recipe is actually adapted from a classic technique for roasting leg of lamb. While this spice-rub is incredible with either, by using this approach instead, we’re not only saving a few dollars, but it’s also a proven scientific fact that your average holiday dinner guest (American, at least) is more likely to prefer roast pork to the slightly more exotic lamb.

  1. This was INSANELY delicious! I made a really good recipe the week before and then this and my sister shrieked "HOW ARE YOU DOING THIS?!?!" ;'D It was a great compliment. I would say the pan drippings were SO good that I would put an even higher quantity of potatoes & carrots in bc they were in high demand.

  2. I made this tonight but had to modify it because I'm broke and used what I had already available in the kitchen! I used the basis of your technique, but added garlic powder, minced garlic,, onion powder, mayonnaise and a bit of soy sauce and olive oil in the marinade baste in addition to the seasonings you have in the recipe! Plus, I stuffed the inside with wild rice. The results were divine and my family loved it. I didn't have any potatoes, so I added green beans and great Northern beans with the carrots in the pan drippings. I'm calling it "Amerocco" Pork Loin Roast. Lol I will definitely be making this again!

  3. Edit: 6/29 The flavor was amazing! I overcooked the roast, so next time I will be sure to check it as it's cooking. The potatoes, carrots and onions were out of this world! The meat was okay, just really dry! : (

    6/28 So I have this in the oven right now. The salt was very very scary for me…even after sitting out for 35+ mins…the salt was still visible. I patted it dry like the directions tell me to do, but it didn't rid any of the salt. I didn't have any problems with the spread…it went on beautifully. I'll update tomorrow to let you know how it came out! I'm so nervous about the salt now because his salt on the pork is not visible like mine was. 😳 sweat sweat sweat sweat
