之前做过了墨西哥咖啡包,也称RotiBoy,今天来做蘑菇可可墨西哥包,Mushroom Choco Rotiboy。用了12连杯子模具来发酵并烘烤,烤时顶部可可面糊自然流下覆盖这个面团顶部,形成超可爱的蘑菇形状。新鲜出炉撕开,外面有一层薄脆的可可饼干,里面是柔软拉丝的面包,面包成果出来非常柔软,蓬松,又加上外面一层脆又苦甜的可可饼干,口感很好,蘑菇很可爱。
收藏方式:烤好吃最新鲜,彻底放凉收密封塑料带,室温可存留3天,冰库可存留一个月左右,要吃前解冻,用toaster弄热回温,饼皮回酥即可保持面包原柔软度。
Previously made Mexican Coffee Buns, also known as RotiBoy, and today let’s make Mushroom Choco Mexican buns, Mushroom Choco Rotiboy. 12-cup mold was used to proof and bake. When baking, the cocoa batter on top naturally dripped down to cover top of the dough, forming a super cute mushroom shape. Tear apart once freshly baked , there is a thin layer of crisp cocoa crust on the outside, and soft stringpull bread inside. The bread is very soft and fluffy, pair with crispy bittersweet cocoa crust on the outside. Good texture, mushroom shape are very cute.
Storage Method: Best eaten freshly baked. Let cool completely, store in airtight ziplock bag at room temperature for 3 days, or freeze in freezer for about one month. Thaw before eating, reheat with toaster, let cool for the crust to crisp back and can maintain original softness of the bread.

128g Lukewarm Milk (below 40C) 温牛奶 (40C以下)
2.5g Instant Dry Yeast 速溶酵母
3g Caster Sugar 细砂糖
245g High Protein Flour/Bread Flour 高筋面粉
4g Salt 盐
25g Caster Sugar 细砂糖
45g Whole Egg 全蛋液
25g Unsalted Butter (Soften) 无盐牛油(软化)
=Choco Crust 可可饼干=
40g Unsalted Butter (Soften) 无盐牛油(软化)
40g Icing Sugar 糖粉
40g Whole Egg 全蛋液
40g Low Protein Flour/Cake Flour 低筋面粉
6g Unsweetened Cocoa Powder 无糖可可粉
0.5g Salt 盐
Pearl Sugar 珍珠糖
(Preheated Oven 180C: 15-20minutes)
(Top Bottom Heat, No Fan Force, Middle Rack)
