Mussels in White Wine

Ingredients:
• 3 lbs fresh mussels
• 2 cloves garlic, minced
• 5 sprigs parsley, chopped
• 3 Roma tomatoes, diced
• 28 oz can whole tomatoes or 1 jar homemade tomatoes
• 1 hot chili, diced
• 4 tbsp olive oil
• ½ cup Gratsi white wine
• Salt and pepper to taste

Instructions:
1. Rinse the mussels under cold running water and set aside.
2. Heat olive oil in a large pan over medium-high heat. Add garlic and sauté for one minute.
3. Add mussels, wine, chili, Roma tomatoes, salt, and pepper. Stir well.
4. Blend canned tomatoes until smooth, then add to the pan.
5. Sprinkle with parsley, cover, and steam for 15 minutes.
6. Serve hot and enjoy!
