1 large whole egg
3 large egg yolks
70g cheddar cheese
50g parmesan
1 tsp black pepper
1/2 cup pasta water

Half an onion
3 – 4 garlic cloves
2 tsp red chili flakes
1 roasted red pepper
1 tbsp tomato paste
Pasta water as required
1 cup tomato passata
2 tsp black pepper
Pinch of salt
Basil leaves
Thyme
50g butter
1.5 tbsp honey

►Salmon Prep

4 – 5 salmon fillets
1.5 tsp sumac or lemon powder
2 tsp cayenne pepper
2 tsp garlic
1.5 tsp black pepper
2 tsp dill
2 tsp sea salt

1 cup plain flour
2 tsp seasoning
1 tsp salt
Oil for frying
