ʜᴏɴɢ ᴋᴏɴɢ ᴘᴏʀᴋ ᴄʜᴏᴘ ʀɪᴄᴇ:
ɪɴɢʀᴇᴅɪᴇɴᴛꜱ //
ᴘᴏʀᴋ:
* ~ 1 lb pork shoulder or pork chop
* 1 cup cornstarch
* 1/2 tsp of salt
* 1/2 tsp of white pepper
* 1/4 tsp five spice (or cinnamon in a pinch)
* 1/2 cup frying oil
ᴍᴀʀɪɴᴀᴅᴇ:
* 1/2 Tbsp Cornstarch
* 1 tsp white Pepper
* ½ tsp Sugar
* 2 Tbsp Light soy sauce
* 1/2 Tbsp Shaoxing rice wine
* 3/4 Tbsp Sesame oil – to add separately
ᴛᴏᴍᴀᴛᴏ ꜱᴀᴜᴄᴇ:
* 1 onion – sliced or diced
* 1 potato, diced
* 3-4 stalks celery, sliced
* 3 tomatoes, sliced into wedges
* 3/4 tbsp minced garlic
* 1 Tbsp Ketchup
* 1/2 tbsp of Worcestershire sauce
* 1.5 tsp of sugar
* 2 tbsp red wine
* 1/2 tsp White pepper
* 3/4 cup of water
* Salt to taste
ʀɪᴄᴇ:
* 2 cups cooked white rice
* 3 slices ginger, minced
* 1/2 tbsp minced garlic
* salt to taste
* optional white pepper
ᴅɪʀᴇᴄᴛɪᴏɴꜱ:
• Tenderize the pork chops with the back of your cleaver.
• Mix the marinade ingredients together and rub all over the pork chops. Add in the sesame oil last, then set aside for 20 mins.
• Heat a pan on medium heat. Add in rice, some salt and pepper and lightly stir fry. Evenly cook fried rice for a few minutes until mixed, and then place in a baking pan lined with foil.
• Combine corn starch, salt and pepper in a separate bowl. Dip the pork chops in the cornstarch mix, then fry on medium-high heat for 2 minutes each side until golden and crisp, they don’t need to be cooked all the way through, but should not be red.
• Remove pork chops into a bowl lined with paper towel or baking tray. Add pork chops on top of the rice in the baking tray.
• Preheat oven to 450F.
• For the tomato sauce; on medium heat fry off the onions, then garlic for a few seconds in the pan without oil.
• Add in 1/2 tbsp neutral cooking oil.
• Next add the potatoes, celery, sugar, salt, white pepper, ketchup, worcestershire sauce, water and simmer for a few minutes. Once slightly thickened add the red wine in.
• Add in sliced tomatoes and saute for 1-2 minutes until softened slightly.
• Add the tomato sauce over the pork and rice tray.
• Bake at 400F for 20 minutes.
