Why 3 1/2 lbs of ribs. What if I use 3 or 4 lbs? Will the recipe still work?

Half of those ribs are getting NO marinade. Im not sure what tenderness they will get from milk, or even what flavor. Are you sure you didnt mean to use BUTTERMILK?
