Been 8 days and I can’t get a starter going.
It keeps forming hootch. 1/2 cup all purpose flour 1/2 cup water. Remove 1/2 as feed. It is stiff. No bubbles. 😢😢

Update….
I’m more of a gardener than a baker. 😊. My starter was cold. I put a meat thermometer in it. It’s winter here. Cold outside ( 20’s). So I got my plant heat pad. I put the starter on it. This morning. ( 2/20/24). I had a started forming and tripped in size. 😃. I’m baking today.
I love this recipe but im having trouble with dough sticking to parchment paper even after flouring ALOT! please help me
17:08 Mary my dough is not rising. It’s been 2.5 hours. My starter was very bubbly and passed the float test but did not double is size. This is my second attempt and both times dough did not rise. I’m thinking it must be my starter. Is the float test accurate and does my starter have to also rise? Thank you!

When and where do add the apple cider vinegar?
Did not work for me.
I think for 1 cup of water, 3 cups of flour is too dry, it wouldn’t even blend together into a ball.
Could it be that recipe calls for 1 PART starter, 2 PARTS water, 3 PARTS flour?
Daughter (32, 1st time baking sourdough) and I, followed steps exactly, both ended up with very dry boules that screamed for more fluid, they would not take the fold or stretch well.
She added fluid and starter.
We let them rest 1.5 hrs. Mine didn’t grow a millimeter, hers grew 20-30%.
She scored hers, popped in the oven. It didn’t rise. Did open a bit in the splits, but it was compact and with a very hard crust.
I’ve baked sourdough before, knew mine wouldn’t come out right, so instead of the 1.5 hrs let it sit overnight. If tomorrow it didn’t rise, I’ll make grissini but not bread.
Sadly I was looking forward to the experience and maybe she’d fall in love with it. Instead she was very frustrated. I kept on telling her, trust the process, but this one didn’t work for either of us.
can you cook this in a loaf pan?

Hey Mary, thanks for this video you bring up a few good points.
My question is, if I don't want to maintain a sourdough starter, would I be able to use kefir/kombucha to achieve the fermentation and a little rise?
I do kombucha/kefir regularly but find sourdough starter maintenance to be too frequent. So if I can replace the starter with other options.
My main focus is to achieve the digestibility and low carb advantages and not about rise and taste. My plan is to make German style rye sliced bread.
