Why seal the pastry if you're going to cut it in strips?
A simple rinse of the strawberries is fine.

What about that drink? Just strawberries and lemons? No sugar? Baking soda and vinegar aren't going to sweeten that up, it's to kill the bugs on the strawberries.

Very pretty as is. Or you might serve in the glasses, as another commenter rudely pointed out. The issue is the glasses might visually overpower the tart. Might work by adding a dollop of fresh whipped cream or creme fraiche and a sprig of mint to complete the look. I appreciate the time you put into this, Bravo!
