This is probably delicious but one of the overwhelming benefits of fruits and veges is the Fibre we get from it, when we do this we completely eliminate it. This is great but wouldn't do this everytime. Sometimes taking out all the Fibre like this leads to massive spikes in blood sugar which can be detrimental.
Why would people not like those veggies if they taste amazing 😭 plus that combination is exactly what my mother in law uses to make soup, like always (she's Romanian and apparently it's the common soup base in their culture) it's delicious fr, veggies are bomb, I don't get people who hate them
The moment you blend something. You destroy the fiber once and for all. Nutrients??? The percentage falls to single digits. Careful what you cook and how you cook it.

Or don't blend them and cook it with rice the same way and you'll have a North Indian rice dish "Tehri" with your touch, tastes awesome in winters with some raita and pickle.
