Add the vegetables at the last 30mins otherwise they will be too mushy. Unless that’s what you like.

I was taught to flour and brown stew meat than to simmer it alone for at least 1 hour and than add vegetables and seasonings so they don't cook too much. I'm glad to see you added cornstarch and water at the end to thicken broth. So many people leave stews watery.
