Ingredients: 300g Pad Thai noodles 1 lb chopped chicken breast or thigh 2 eggs 5 green onions, thinly sliced 5 oz sliced shiitake 1 red bell pepper 1 cup fresh bean sprouts 1/3 cup chopped peanuts
Sauce: 1 1/4 cup coconut milk 1 1/4 cup chicken bone broth 3 cloves garlic, grated or chopped 1/4 cup fish sauce 4 tbsp tamari sauce 1/4 cup coconut sugar 5 tbsp rice vinegar 2 tbsp sriracha 2 tbsp peanut butter
Garnishes: 1/4 cup chopped peanuts 2 limes Green onions (use the green part)
Directions: Preheat oven to 400F In a casserole dish add all the sauce ingredients and mix well. Crack in 2 eggs to the sauce and whisk to combine. Then spread the noodles on the bottom of the pan and top with the chopped chicken breast, sliced shiitake, sliced bell pepper, and sliced green onions. Gently stir top ingredients to coat and combine. Place the pad Thai in the oven and bake for 15 minutes. Then gently remove from oven, stir, and put back in the oven for another 10 minutes, then remove and stir again, placing it back in the oven for a final 10-15 minutes when the sauce has fully incorporated into the noodles. Remove from oven then add the bean sprouts and peanuts and stir to combine. Serve yourself a plate and garnish with more chopped peanuts, green onions, and a squeeze of a lime. Enjoy!
Just tried this recipe and it was surprisingly delicious! The only difference I made was adding shrimp during the halfway point. It made great leftovers for late night snacking and satisfied my pad Thai craving at a very reasonable price!
