Craving something easy and comforting? This one-pot Hainanese Chicken Rice (海南鸡饭) is my go-to-simple ingredients, full of flavour and perfect for a cozy meal at home 🍚🐓
Tried making it in my new Velosan Pebble Non-stick Fry Wok (32cm), and honestly… it might just be my new kitchen fave 😍 So easy to cook and clean.

✨ You’ll only need:✔️ A handful of pantry staples✔️ One @Velosanmy Pebble Non-stick Fry Wok (32CM)✔️ 30 minutes of chill cooking time

Ingredients
For the soup base:
* 4 chicken thighs
* A bunch of scallions
* 7–8 slices of ginger
* Salt and MSG or 1 chicken cube (to taste)
* 1 litre water

For the chicken rice:
* 2 cups (about 450g) jasmine rice
* 2 tbsp shallot oil
* 4 cloves garlic, minced
* 4 slices ginger
* 2 pandan leaves, knotted
* 1 stalk lemongrass, bruised
* 2 cups chicken soup (from earlier)
* 2 cups water
* 1/2 tsp salt
For the chicken rice chilli:
* 8 fresh red chillies, deseeded
* 3–5 Thai chillies (adjust to spice level)
* 6 cloves garlic
* 4 calamansi limes, skin on (remove seeds)
* 1 tbsp sugar
* 1/2 tsp salt
* 1/3 tsp sesame oil
* 1/3 cup water
For the ginger paste:
* 1/4 cup chopped scallions
* 1/3 cup chopped ginger
* 1/2 tsp salt
* 1/3 tsp sesame oil
* 1/2 cup hot oil
