One Pot Pasta



We have another one pot meal that is as delicious as it is easy. You can prep the night before, come home and throw it in the pot, get the kiddos ready for dinner, or get some studying in if you’re a student. All you have to do is stir it now and again. It makes its own sauce, you might even have most or all of the ingredients on hand to make it. I hope you will give this a try. Recipe below.

Ingredients:
8 oz linguine
1-pint cherry tomatoes, sliced in half
2 oz baby spinach
1 small onion, finely sliced
1 Tbsp garlic, minced
1 Tbsp basil
1 Tbsp Italian seasoning
salt to taste
2 Tbsp olive oil
1/2 tsp crushed red pepper
2 cups chicken broth
2 oz parmesan cheese

Directions:
In a large pot, add linguine, tomatoes, spinach, onions, garlic, Italian seasoning, basil, and salt. Drizzle olive oil over ingredients in the pan. Pour chicken broth over ingredients. Cook 15 – 20 minutes or until linguine is done and has absorbed the broth, stirring occasionally. Remove from heat. Stir in parmesan cheese. Enjoy!

  1. Sweet girl, you pronounce Italian just fine. (Eye-talian). I’m originally from NC, but have just moved from Texas after being there 50 years. They all pronounce it “eye-talian”. And, most of our southern states do, as well. I like your accent. Everyone has an accent of some kind!! So, keep on being you!! ♥️🙏🏼♥️

  3. I usually notice real mispronunciations of countries, but you sound fine to me. You don't say EYE-talian, and if you do, your stress is correct. People should find other things to talk about. . . .like how you always look so nice, with your wonderful shirts/outfits. Or maybe just discuss the food you make! That's why we're all here. And this recipe looks great!

  5. I’m late watching you again. I’m so busy since I retired but my house is getting cleaner and organized. I seriously neglected it for 10 years. This is a scrumptious looking meal.   6. Hi, Karen, always great to see you. Another terrific recipe–quick and delicious. I would have never thought about cooking pasta this way, but I'm sure it imparts more flavor in the pasta than simply boiling in water. And to toss everything in at the same time to cook. I will surely be trying this. We're having a real cold snap here in Denver this weekend, together with snow, so with the football games to watch, this will be a great dish to toss in the pot and eat while watching the games.   7. I love Italian food or anything with pasta in it. Don’t take any notice of those negative woke people, everyone’s accent is different. I’m an Aussie and I pronounce it Etalian. Just block people like that Karen. I love the way you speak.

    I guess you can add other green vegetables if you don't have spinach – maybe frozen peas, broccoli florets or manges tout?

    I must say I'm intrigued by your electric skillet. What would you say are its advantages, over the old fashioned saucepan on the stove? Watching you conjure up so many wonderful meals with yours, has me very tempted to buy one!

    I am English and I just adore your accent, it's really charming. Who cares how you pronounce a particular word? Please pay no heed to those who spread negativity.   10. Hello karen! I love pasta! Yes i would probably eat it without the meat. I love the veggies and the broth with it. Yummy! The herbs and the Parmesan tops it off!! I know hubby will be a happy camper 😊 ps: Don't worry about the negativity!! There is more positive subscribers than negative!!!!!! We have the VICTORY!!!!!
