Some of you have requested for single serving recipes as it is convenient for individuals who live alone. That is a great suggestion and I feel that even others who lives with many family members can also benefit from it as not all our family members are living low carb or keto.
Recently I started publishing videos on 90 seconds keto bread, starting with almond flour then coconut flour and now, flaxseeds. I have provided more variations, so you have more options. I will be coming out with more single serving recipes, not just bread but cakes and other recipes, too as part of my new cookbook project on single serving recipes using microwave oven.
Now, some of you have asked whether you can use conventional ovens for these 90 seconds keto bread because you don’t have a microwave oven. Yes, you can bake it for 9 to 10 minutes on the middle rack at 350 F or 180 C, but the bread does not puff up as much as those using microwave oven and the texture is denser and stickier as shown in the video.
Microwave ovens are great for small servings. If you want to bake a whole loaf of bread with microwave oven, it will not work. But conventional ovens are great for baking loaves of bread. This is simply due to the differences in the cooking method between microwave and conventional ovens.
This recipe does not require psyllium husks because of the small amount and the characteristics of flaxseeds. Of course, it will not work if you omit the psyllium husk when baking a loaf of bread with flaxseeds. With only 2 to 3 ingredients, you can whip up these soft and fluffy bread in no time and it is totally guilt free with zero net carb content.

INGREDIENTS
1. WITH EGG
Ground golden flaxseeds = 50 g (1/2 cup)
Baking powder = 2 g (1/2 tsp)
Whole egg = 1 large (52 g) (OR Fresh egg white = 1 large / 37 g)
Room temperature water = 35 ml (2 1/2 tbsp) (OR 45 ml / 3 tbsp, if using egg white)
2. WITHOUT EGG
Ground golden flaxseeds = 80 g (3/4 cup)
Baking powder = 6 g (1 1/2 tsp)
Room temperature water = 70 ml (4 1/2 tbsp)
DIRECTIONS FOR BOTH VERSIONS
1. Add the dry ingredients into a bowl and mix to combine.
2. Add the wet ingredients and mix until well combined.
3. Transfer the batter or dough into a 4 3/4-inch square baking dish that is microwave safe and lined with parchment paper. You can adjust the recipe to fit the size of your baking dish.
4. Spread evenly.
5. Microwave for 90 seconds. It is done when the top feels firm. As not all microwaves are the same, you may need to adjust the timing accordingly. If you prefer to use the oven, you can bake it for about 9 to 10 minutes at 350 F or 180 C. However, the texture is denser and stickier as you can see in the video.
6. Remove bread and parchment paper. Let it cool slightly before slicing into half.
7. The texture of the version with egg is light, airy, soft and fluffy.
8. The texture of the eggless version is heavier and denser.
9. Both versions are crispy when toasted.
10. You can enjoy these 90 seconds bread as sandwiches, grilled cheese, toasts etc.
