Yup
STOP SAYING 'SALZA', DAMMIT!!
A couple tips….Just say "hell no!" to veg oil. Use lard instead. Add 4-5 garlic cloves and 2-3 Bay leaves and you'd not be sorry.
I'm mexican , watched 10 YouTube vids and trust this is the best one !
Best I ever had.
I made these yesterday. And they came out delicious. I used a can of evaporated milk and the rest 2%. Also added garlic cloves, Pablano pepper, and fresh oregano from the garden, to the pot.
"you are the king tut of how to cut your butt" just got my sub…I watch this channel for so many good recipes, they always turn out so delicious
I've been making this for years with the orange using "country-style" pork ribs. I kept hearing about braising with milk, but it sounded disgusting. Now that I've actually seen it in action, I'm going to give it a try. Thanks for making yourelf the guinea pig! /;)
Simmer 2 hours. Bake 450F for 15 mins. Toss. Broil.
I've made caritas for decades. I've used the milk method and honestly can't tell the difference. I save my milk for other dishes.
Try it using Eagle brand canned milk . It adds a sweetness that is complimentary
Anyone help me use the sauce from this in another dish?
Thought it would make a great brush-on when grilling chicken. But I don’t have a grill 🙁
Pork shoulder and Pork butt are different cuts
Which is the preferred result: crispy slow roasted or orange and milk braised?
can you substitute beef for the pork??
So what do you do with all that left over liquid, just throw it away?
Humility is a beautiful thing. I'm glad you gave kudos to the original recipe but like you said, yous is still good so that's great. I cannot wait to try it
Would sour orange juice work in this recipe?
I tried to make these… not sure where I went wrong; but the milk curdled and they were way too disgusting to eat.
Chef John, a long time ago (4-5 yrs) I came across a video of your that included refried beans. It was NOT the main dish in the video but they were delicious. The video that is on the page for refined beans is not the same. It had butter and oregano etc. did not have garlic as the newer video does. If you receive this msg, could you like the old video. I literally went through your library but must have missed it
Can I use evaporated milk
No Coca Cola ?
Great job Chef John I watch all your videos I enjoy them thoroughly
Doing this tomorrow
An old German woman once told me to quit wasting money on expensive cuts of beef. Buy the cheaper cuts of meat and soak them overnight in milk, preferably buttermilk. She didn't lie! Even improves the taste of chicken.
Absolutely delicious!
No more garlic or 5 spice?
Dude where is the queso fresco?!?!
You're voice is so great. I love listening to you !
This is no longer carnitas. It's good , but not carnitas.
Ahh wuah wuahh weee wuah!
Can i do this with pork loin
john you are incredibly funny. I will be the king tut.. of my butt.
Could you use buttermilk in this?
Imthink that is your most beautiful dish to date. But, 8 am letting my bias show. I love me some great Mexican food!❤️
"MILK"!😨…LOL, OK MAYBE I'LL TRY IT ONE DAY.
I am cooking it RIGHT NOW! OH mama ….can't wait!!!
Not very good really dry try the other carnitas recipe much better
Sorry but seasoned carnitas have to be cooked in lard then add condensed sweet milk plus two oranges … That is the original way. 🤦♀️
I just noticed chef john created a roasted pork cinematic universe.
Don't be shy on the Cilantro and onions..
its pronounced Cumin
Those are flour tortillas in the video, and they are a no-no for carnitas or any kind of tacos; tacos are not made with flour tortillas.

What do you do with the braising liquid afterwards? Just discard?
