Tanka Torani: A sip of Odisha’s culinary heritage!

Ingredients required:
Cooked Rice: 1 cup
Yogurt – 4 tbsp
Mango ginger – 2 pcs
Curry leaves
Coriander leaves
Lemon leaves
Green chillies
Lemon slices
Cumin powder
Salt

How to make Tanka Torani:
1. In a deep bowl, mix well with cooked rice and sufficient water.
2. Cover the bowl, and keep it aside to ferment for 1-2 days or at least 18-20 hours.
3. Mash the rice very well using a potato masher or hand.
4. Then strain the rice and keep aside the water (Torani).
5. Add well-beaten yoghurt and Torani (strained water) into that bowl and give a quick mix.
6. Roughly muddle mango ginger, curry leaves, coriander leaves, and green chillies and add to the rice bowl.
7. Next, squeeze half lemon and add the lemon slices, leaves, roasted cumin powder, and salt.
8. Mix everything and adjust the consistency by adding less or more water.
9. Pour into a serving bowl and serve!
