Oven Baked Chicken and Rice| One Pan Dinner

The rice in this recipe is very delicious! It’s buttery and garlicky, tender but not mushy. The secret tip is to briefly bake onion with garlic and butter before adding the rice, liquids and chicken – it adds a great flavor base!

Ingredients
7 chicken thighs
1 tsp thyme
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground black pepper
1 tbsp. Tony Chachere’s creole seasoning
1 dry parsley
1 tsp paprika
2 cups chopped onion and bell peppers
2 garlic cloves
2 cups jasmine rice
2 cups low sodium chicken broth
2 tbsps. olive oil
salt and pepper to taste

  2. I think I missed something. I did not see if and when you transferred the food to a baking dish. This recipe appears to be all stovetop. Do you actually brown the rice then place it in a baking dish and add the chicken and cover it?

  3. So glad I found this recipe. My husband was so pleased. I did not have the Cajun spice listed so I used what I had in my spice drawer……Slap Yo Mama! It’s so good that I am going to make it again in a week when our daughter and SIL comes for dinner. It will be too hot to grill so I don’t mind the oven on with AC.

  4. Using "Low Sodium" chicken broth, and then adding salt, strikes me as dumb…Sorry, but it does…This dish is very good, and I've cooked it several times…I just don't add as much salt as you do…

  5. I did this last night. I don’t think 2 cups of broth is enough. The chicken turned out PERFECT but the rice was crunchy. I took the chicken off added the rest of the carton of broth and put it back in over for 30 more minutes and it was edible but you have a 1:1 ratio liquid to rice. I don’t get it how you guys are pulling this off…🤔

    We’re in the middle
    Of a move and I had this pack of chicken thighs staring at me as a possibility for dinner. I came across your recipe and it sounded delicious. But I could see right away that I didn’t have a few of the ingredients. And I was too tired from the move to go to the store. So these are the subs I did:
    I didn’t have any onions so I chopped some celery. And I had no chicken broth..so with a leap of faith and more years cooking than I can remember..I found a package of onion soup mix. I used this for the broth by adding it to two cups of warm water. That also took care of my lack of onions in the dish. Then on a hunch..I threw in a can of drained mushrooms. I also had to sub Old Bay for your creole seasoning, and popped it into the oven with the hopes it would be edible with all of my subs I had to do.
    I needn’t have worried though because it turned out delicious!! So full of flavor and my rice was so perfectly cooked and fluffy!! The chicken so tender and juicy on the inside and just the right amount of crisp on the outside (thanks to your suggestion to pop
    It under the broiler for a few min)
    Very impressed and looking forward to making it again with all the right ingredients. But at least my subs worked! 😆🥴 Thank you again for a great recipe!! 🤗🦋

  7. I’m making this now. It’s in the oven. I used onions and mushrooms. I was a little nervous about only using 2 cups of water for 2 cups of rice. I guess I’ll find out in about 30 minutes 🎉😂
