We do stuffed poppers with clams and scallops a lot. Just hollow out the pepper but keep it whole, chop up your seafood and mix it with the cream cheese and pipe it into the pepper. Wrap the pepper in bacon and on the grill they go.
Bacon wrapped always takes the dish to another level lol. Looks really good though I’ve never had oysters.

I'd take the oyster cheese and cream cheese
Blend it all together with the stuff you took out of the pepper (seeds mainly)
Add in some bacon bits and maybe a few other things
Stuff it into the pepper and wrap it in bacon then throw them in a smoker until the bacons done
Jalapeno popper stuffed oysters!
I want two dozen
Chop them up with those jalapenos… WITH the cream cheese and bread crumbs!!!
Stuff the oyster shells with that stuffing and bake it!!! 🤯
