Do you guys offer a school. Or let me work for free I’m currently three years into meat cutting I learned in beef before pork and turns out beef is more challenging. To be able to find and cut the particular sub primal out is amazing to me. I don’t need to know for my job but I want to feel more confident in becoming a master at what I do like you guys.
