Pasta alla Burrata con Parmesano Verde // Burrata Pasta with Basil Parmesan
– 200g Spaghetti
– 400g Tomates Cherry // 400g Cherry Tomatos
– 200g Queso Burrata // 200g Burrata Cheese
– 1 Diente de Ajo // 1 Garlic Clove
– Aceite de Olive // Olive Oil
– Sal al gusto // Salt to Taste
– 1 Taza de Agua de Pasta // 1 cup of Pasta Water
Parmesano Verde // Green Parmesan:
– 100g Queso Parmesano // 100g Parmesan Cheese
– 20g Albahaca Fresca // 20g Fresh Basil
1. Sofrie por 10-12 minutos en una sartén con aceite el ajo, tomates y sal // Sauté the garlic, tomatoes and salt for 10-12 minutes in a pan with oil.
2. Licua los tomates con la burrata // Blend the tomatoes with the burrata.
3. Regresa la salsa a la sartén agrega la pasta, el agua de pasta y combina // Return the sauce to the pan add the pasta, the pasta water and combine.
4. Para el Parmesano Verde combina la albahaca y el Parmesano en un procesador de alimentos // For the Green Parmesan, combine the basil and Parmesan in a food processor.
5. Sirve la pasta y termina con el Parmesano Verde // Serve the pasta and finish with the Green Parmesan
