Pasta Alla Norcina – The Most Underrated Pasta. Ever.



Pasta alla Norcina might be the best pasta that most people in America haven’t heard of. It consists of pan-seared crumbled sausage in a creamy white wine sauce with a touch of nutmeg. Traditionally this dish uses a mild sausage and is finished with black truffles. To keep it economical I instead used a bit of baby Bellas diced up. I hope you enjoy this pasta alla Norcina recipe!

  3. lol so many of your dishes involve mushrooms and I hate mushrooms. Thankfully they can often be left out of the recipe but everytime I start a new video and I see mushrooms I'm like ahhhh man not again lol.

  6. The ratios are absolutely everything in this dish. You can definitely make a mistake and end up with an inedible mess. This isn't like a Bolognese where you can just throw everything in, set and forget and it will come out at least decent.

  7. As a health and wellness professional, fat is good, sugar is bad. Just make sure they are healthy fats, avocado oil, coconut oil, olive oil, grass fed beef, pasture raised chickens, and even pork that is sustainable raised. Too much to unravel on fats, and I am over-simplifying it, but that's an overview. Nice Recipe, but I think I will go half ground sausage, half sliced sausages, ….for presentation and texture. Also, DURHUM WHEAT pasta is one of the healthiest, as it's the original wheat strains, not GMO, or modified, and less gluten.

  8. Sausage is not a physical part of any animal. By definition sausage is “minced and seasoned meat that has been encased in a skin and cooked or preserved, sold mainly to be eaten cold in slices.” Or as we see an optional uncased form is available. If it wasnt seasoned it would be just ground beef or pork or lab etc…. So seeing spices…is natural for the sausage he is using.

  9. Just tried this with vegan impossible sausage and subbed the heavy cream for oat milk and it came out soooo good. Still used real pecorino, don’t think I could get away without real cheese. But damn was this the perfect comfort food on a rainy Tuesday night
