  1. Coincidentally, I just made this for the first time yesterday. Wish I watched your video first, couple of tricks I could have applied. Mainly, I didn't make a crema with pasta water into the cheese first. I emulsified the fat with starchy pasta water in the pan while taking the half-cooked pasta to al dente and then emulsified the cheese in at the end. Will try your method next time.
