Pav bhaji masala
Ingredients:
โ Coriander seeds 2.5 tbsp
โ Cumin seeds 1.5 tbsp
โ Cloves 10 nos.
โ Star anise 2 nos.
โ Black cardamom 3 nos.
โ Cinnamon 2 sticks
โ Bay leaf 2 nos.
โ Fennel seeds 1.5 tbsp
โ Kasuri methi 1 tbsp
โ Turmeric powder 1/4 tsp
โ Dry ginger powder 1/4 tsp
โ Hing 1/2 tsp
โ Kashmiri red chilli powder 1 tbsp
โ Kaala namak 1/2 tsp
โ Aamchur powder 1/2 tbsp
โ Salt 1/2 tbsp
Method: Roast the whole spices on low heat and then blend it into a fine powder.
Pre prep
Garlic green chilli paste:
โ Garlic cloves 1/2th cup
โ Green chilli spicy 4 to 5 nos.
Boiled vegetable:
โ Potatoes 7 nos.
โ Beetroot 1 nos
โ Phool gobhi 1 medium sized
โ Hara matar 3/4th cup
Method:
โ For garlic green chilli paste, transfer the garlic cloves and green chillies in a mixer grinder, add water as required & grind in a fine & runny paste.
Bhaji
โ Butter 50 gm + oil 2 tbsp
โ Jeera seeds 2 tsp
โ Onions 2-3 medium size (chopped)
โ Capsicum 2 medium size (chopped)
โ Potatoes 7-8 medium size (boiled & mashed)
โ Tomatoes 7-8 medium size (chopped)
โ Boiled green peas
โ Boiled cauliflower florets
โ Beetroot 1 medium size (boiled & grated)
โ Fresh coriander a handful (chopped)
โ Salt to taste
โ Prepared pav bhaji masala 2 tbsp
โ Kashmiri red chilli 2 tbsp
โ Dhaniya powder 1 tbsp
โ Haldi powder ยฝ tsp
โ Kasuri methi 1 tsp
โ Garlic green chilli paste (half)
โ Hot water as required
For tadka:
โ Butter 50 grams
โ A pinch of jeera seeds
โ Garlic green chilli paste (half)
โ Pav bhaji masala 1 tsp
โ Kashmiri red chilli 1 tbsp
โ Salt to taste
โ Freshly chopped coriander leaves
โ Butter as per your preference
โ Lemon juice 1 tsp
Method:
Set a big size tawa on medium high heat, add butter & oil, further add jeera & allow it to crackle, add onions, capsicum and cook on high flame for 2-3 minutes.
โ Further add the boiled & chopped veggies, salt, prepared pav bhaji masala, powdered spices, mix it really well & try to break down the veggie chunks with the spatula.
โ Further add prepared garlic chilli paste, mix well and initially add 1-2 cups of hot water, now use a pav bhaji masher and start to mash the bhaji really well, keep the flame low and mash until the bhaji is almost crushed. Add water tadjust the consitency.
โ The base of the bhaji is ready, let the bhaji simmer on low flame by the time you can make the tadka that needs to go on the bhaji.
โ For tadka, set a pan on medium heat, add butter, jeera, kashmiri red chilli, garlic paste, pav bhaji masala and add the tadka into the bhaji & mix well.
โ Add freshly chopped coriander leaves, butter and lemon juice, mix well and cook on medium heat for 2-3 minutes.
