  1. Peach Cobbler
    4 peaches peeled
    Blanch and shock method: boil water and submerge peaches cut with X slits for 30 seconds, then transfer to a bowl of ice water. Peel the skin right off.
    Half & slice the peaches
    To a bowl add peaches
    1/4 cup brown & white sugar
    2 tsp Allspice
    Mix with tongs
    Add to casserole dish
    Topping:
    1 cup flour
    1/2 stick softened butter
    1 tbsp baking powder
    1/8 cup brown sugar
    1/8 cup white sugar
    Mix until dough like consistency
    Dollop onto peaches
    Add cinnamon stick to center
    Bake 425 for 25-30 min
    Enjoy with vanilla ice cream
    Or whipped cream
