so, big question, if i bring it up to a simer and then shut the lid on my pressure cooker and leave it for 30 minutes, will i break the dish or will it be fine …. beef is expensive as hell where im from and sorta dont want to waste it on a experiment

I do a pot roast recipe where I brown the meat before I cover in paste. I like the extra flavor of the browned meat. Has anyone tried this with this recipe?

Okay, I've looked up several different recipes for this and so far this one I think has the best ingredients cuz I love herbs and everybody else is just using garlic and peppercorns which is great. But man you add sage and rosemary. Oh this just makes the best tasting meal .

That meat is way over cooked.
I use tri-tip for this recipe. And I braise it in the oven at 300F.
This makea a great chili basis, my two cents.
I love beef shanks. In the Mexican-meat section of Texas grocery stores they are super cheap and I love bone marrow. The Mexican meat section has tripe, beef tongue, beef heart and other delicacies that the gringos avoid. I always shop that section because of the price! $ vs $$$$ Short ribs are too hip and way too expensive now.
What can I substitute the wine with?
If you sear the meat first it adds more flavor and it becomes even more tender.
