I marinate mine in buttermilk over night that tenderizes and gives a tang – then dredge in seasoned flour and wait a few hours to set up

Camirra: next time you buy chops flatten them slightly with a meat mallet, dip in beaten egg (seasoned with salt/pepper), then coat in Sage & Onion stuffing mix and shallow fry in butter. It’s delish!!
