PHIRNI

Ingredients

5 tbsps rice, soaked for 30-40 minutes, and drained
1 litre milk
A generous pinch of saffron
¾ cup sugar
½ tsp green cardamom powder
10-15 pistachios, blanched, peeled and slivered

Method

1. Transfer the rice in a grinder jar, add ¼ cup water and grind to a coarse paste.
2. Bring milk to boil in a deep nonstick pan. Add the prepared rice paste, saffron strands and cook on medium heat for 10-12 minutes or till the rice is completely cooked.
3. Add sugar and cook on medium heat for 2-3 minutes or till it dissolves completely.
4. Add green cardamom powder and mix well.
5. Transfer the mixture in individual earthenware bowls, sprinkle blanched pistachios and allow to come down to room temperature.
6. Refrigerate for 2-3 hours.
7. Serve chilled.

Chef’s Tip: It is a good idea to grind green cardamom with a little sugar as otherwise the quantity of green cardamom may be too little to grind. You can store this in an airtight jar for use in sweet dishes and desserts.
