Hi Chef John, I think it would be better with a Thai pumpkin curry sauce and using a red kombucha squash.

I have made this several times, and each time it turned out magnificent. And for the record I should point out that regular jack-oβ-lantern pumpkins will work just as fine. Where I live, we donβt have access to a wide variety so I have to use whatβs available. And run of the mill garden variety pumpkins are just as edible.
This is our fifth year making this delicious and fun dish! We absolutely love making it and eating it. Always make it the weekend of Halloween π
Guinea pigs fit great in pumpkins
My G-Ma made stuffed pumpkin for Thanksgiving and it was so good. I was thinking of it and last I had it was over 30 years ago. I was just looking for some recipes and think I will do a pork stuffing with gold raisins and dried cranberries/Craisins(it;s a tremendous stuffing)

Very quick but also very intelligent historical reference unless you're a pirate and you were keeping pumpkins cuz they kept for months on your ship and you were cooking pigs inside the pumpkins using it as a Crock-Pot before crock pots existed you wouldn't understand a Crock-Pot a piece of pork or pig in a pumpkin you ever heard of John Lafitte this was his favorite meal
I have made this a few times per year now since watching the video about 3 years back. It's the first thing I think of when the Pie (sugar) pumpkins show up at the store. This season the pumpkins are a bit small (1/2 volleyball size ), so I just bought a large pork steak instead of a large pork butt. Even browned the bone up and shoved it in the pumpkin with the meat. Chef John, thank you!!
Maybe I will make an out of season version with canned pumpkin some time. π
