– Sausage of your choice
– 1 Package of bacon cut in half
– Toothpicks
– Postal Barbecue Original Rub
– BBQ Sauce
Pig Shot Filling (Makes about 14)
– 1 Block of Cream Cheese
– 3/4 cup of shredded cheese
– 1 diced jalapeño (add more for added heat)
– Postal Barbecue Original rub (to taste)

The only thing I would want to do is pre-smoke my chilies cool them out and then add them to the cheese mixture and then throw that sucker on the smoker.

Used this recipe and they were great. Only variation is I used a little less filling at added a thin sausage slice cap to hold the filling in place. Deeelicious!

You could also stuff the insides with shrimp puff that has peppers in it. Bell or poblano peppers even. Hell if you are fat like me you could just stuff em with Italian or country sausage and call it a day. Thanks for the ideas.
