You went way too close, way too quick. The first few seconds of this short look disgusting.
The only thing I would change is putting all that f**** tallow on there before you smoked it. If anything I would likely brush it with some melted towel before I seasoned it but that would be it. All that fat ass is a barrier between the meet in the smoke and wouldn't you like it if there was a crust on there?
