Why did he took the skin away! Those are desirable for pork adobo? Skin has a nice texture after adding vinegar .the adobo is too dry .Also , we don’t season the meat like that.Cook the pork until it get brown.then add all the seasonings garlic, soy sauce, water and vinegar . And lastly. Peppercorn and bay leaves.
